Often, turmeric is briefly fried — sometimes along with some vegetables at the start of a recipe and often with other spices, before more ingredients are added. Frying turmeric (and spices in general) changes its flavor compared to putting it in along with more liquidy ingredients like tomatoes. It is often used along with cumin and coriander to give a fairly typical (at least from a Westerner’s point of view) curry flavor. When frying spices — ground or whole — you need to be careful not to burn them so I advise you to prepare ingredients ready to be put into the pan quickly if needed.
